Evan is a fictional disciple of Jesus that chose to miss the last supper in a cutaway gag in "Bookie of the Year".
When Peter tries to encourage Chris to try out for the baseball team, he points out that he might regret it if he doesn't, just like Evan regretted missing out of the last supper. Evan is shown being distressed at missing his chance at being in the painting of the last supper.
